June,2015
The Main Ingredient

The Savvy Food Service operator knows there are four types of Customer Service. The first is the one you provide your employees, another is what employees provide to each other, next the one you provide to your community and  vendors  and finally to the customers that generate sales.
Each one adds value  and  builds life into the customer experience.

Customer Service really begins with the operator hiring employees to translate his vision  into their mission and providing all the necessary tools to support their actions to accomplish it.
Will just list a few tips on what should be in the toolbox and expand on them in the Special Editions Issue on Customer Service in July.

Wages and benefits
Continuous Training
Effective Supervision
Develop a Culture of Service
Empowerment and Teamwork.
Here are some hurdles to avoid
Employee Turnover
Ambiguous Mission
Revolving door Management
Lack of amenities for employees
Ergonomically challenging workspace

The Chef Table
Fines and penalties issued by government agencies are avoidable and preventable if only operators train their employees to become knowledgeable and updated on all State and City laws and regulations that impact their operation. Implementing policies and procedures to be compliant is easier said than done.

However, until they feel the sting of the fines and penalties do they realized the cost effectiveness to know, share and continuously train employees to meet all the necessary regulatory standards and procedures. Food Safety, Sanitation, Wage and hour laws, tip distribution, sick leave, personal time off, retaliation and more recently use of  credit check in hiring decisions and the use of words and phrases in the narrative of hiring employees that appear to be discrimination of protected classes of persons
The more training you provide  the least likely you will be fined
It is a good operating strategy for operators and managers to be aware of all laws and regulation that govern the operation of their business and to make it part of their daily routine to inspect for compliance while circling from Kitchen to Dining Room, to Store room, to Sanitation, to loading dock, and back to the Kitchen before settling down in the office  to do paper work.
A well trained team is your best operating strategy.
